Fruit Drying Process

1.Preheating: Set the temperature around 35℃, usually for half an hour.

2.Drying: Raise the temperature from 40 to 55℃, each time set to raise the temperature by 5℃, the duration is also different each time, it needs to be decided according to the fruit varieties and drying requirements, a small amount of moisture can be drained in the early stage, and the amount of moisture can be increased in the later stage, the whole stage is about 6 to 12 hours.

3.Ripening/Maturation: The fruit itself is high in sugar, this stage is also called saccharification, because of the high sugar content, moisture is not easy to disperse, so it is necessary to increase the temperature, about set to 55 to 65 ℃, the length of 2 to 4 hours, pay attention to the timely drainage of moisture.

4.ShrinkageAt this time, the internal moisture content of the fruit is low, the shape has tended to stabilize the shrinkage state, but the internal moisture of the whole fruit is uneven, you can continue to use 55 ℃, continue drying for 2 hours, to wait for the internal moisture content to drop to the expected requirements to complete the whole drying.
